We will welcome a special guest on this day. Mia Dancey from the University of Porto, Portugal will discuss her thesis findings. She studied informality amongst urban farmers as part of a degree in urban studies. She will share high-level theoretical findings on informality. This will give us all a higher-order understanding of urban agriculture and how it exists in society. We thank and welcome Mia and her supervisor Miguel for this opportunity!

On the 3rd of August we will focus on the design of products and services for urban agriculture, and the integration of these with sales. This is our 6th workshop this year. We know what urban agriculture can achieve. Our market analysis showed several lucrative opportunities in the urban food market. We have condensed this into a Unique Value Proposition for an urban agricultural enterprise – the creation of a price reduction mechanism for urban agricultural produce by the harvesting and local repurposing of waste. Small farms are under intense competition, and hence have to build their enterprise models on a very low-cost input base and a very high profit margin. This is made possible by high value retail sales and low-cost high intensity biological production systems. Waste harvesting and processing is thus integrated with sales in this business model. Engagement events and social media can educate the customer, market the produce and involve them in this price co-creation model. This in effect “designs” the product and the waste exchange service. We looked at starting a business last event, and on the 3rd of August we will discuss these products and services, and integrate this discussion with sales and how to profit from them.
Once you have designed your products and integrated them with your input system, you need to develop a system to sell to customers. In this event we will be looking at the following:
The setting of prices for your produce.
The integration of pricing with waste harvesting.
The integration of engagement processes with sales and price setting.
The integration of linear sales, like bulk sales and convenience sales, with the sale of urban produce.
The creation of a loyalty programme and database for your enterprise.
We will also reflect on how to analyse customer behaviour, and how this could influence your prices.
After this event, you should know how to set prices for your produce for urban customers, create choices for the customer and create value for you and them.
